Aroma A rich and enticing bouquet. Immediately recognisable are the intense notes of ripe blackberry and black cherry, beautifully complemented by aromas of liquorice, pepper, thyme and a subtle earthy touch reminiscent of the warm stones of the vineyard.

Taste The mouthfeel is full, fleshy and extremely balanced. On the palate, layers of dark berry fruit and a striking balance between the soft tannins and spicy nuances. The alcohol percentage of 15% supports the powerful body beautifully, with notes of bay leaf and chocolate lingering long and harmoniously without becoming heavy.

Finish A long, impressive finish. The fruity warmth slowly ebbs away and makes way for a clean memory of Mediterranean spices and a refined, silky-smooth finish.

Serving tips & pairings

• Temperature: Serve the wine between 16°C and 18°C. It is advisable to decant the wine an hour before serving so the aromas can fully come into their own.

• Glass: Use a generous red wine glass (Bordeaux style or a specific Rhône glass) to let the wine breathe at its best.

• Gastronomy: A sublime partner for powerful meat dishes such as leg of lamb with garlic, game stew, or a rich beef stew. Also excellent with aged cheeses.

• Characteristic: Classic GSM blend (Grenache, Syrah, Mourvèdre); traditional ageing in large casks; papal seal on the bottle.

• Moment: This is the ideal wine for a festive dinner, a special occasion, or for cellaring for years until it reaches a beautiful peak.
