Flavour & character

Aroma An intense and enticing bouquet. Immediately recognisable are the rich notes of blackberries and ripe red berries, beautifully complemented by aromas of lilac, rosemary and a subtle mineral touch of graphite (pencil shavings) that speaks of the unique terroir.

Taste The mouthfeel is full, enveloping and very consistent. On the palate, layers of compote fruit emerge, with a striking balance between the silky-smooth tannins and the fresh balsamic undertones. The alcohol percentage of 14,5% supports the powerful structure beautifully, while the refined spiciness of the French oak subtly resounds in the finish.

Finish A very long, elegant finish. The notes of red fruit and Mediterranean herbs slowly fade away and make way for a clean memory of minerality and a refined, fresh finish.

Serving tips & pairings

• Temperature: Serve this wine preferably around 17°C for the ideal balance between fruit and structure.

• Decanting: This wine benefits from at least 30 to 60 minutes of oxygen for its full aromatic complexity to open up.

• Gastronomy: Excellent paired with powerful guisos (stews), grilled red meat, game dishes or a board with very old sheep's cheese.

• Characteristic: Certified organic, limited production and from vines with very low yields.

• Moment: This is a wine for special occasions, a dinner where the wine may be the conversation piece, or to let mature for another 5 to 8 years in the cellar.
