Flavour & character

Aroma An intense and enticing bouquet. Immediately recognisable are the rich notes of lemongrass, quince and orange blossom, complemented by aromas of fynbos, white lilies and a subtle hint of flinty flint.

Taste The mouthfeel is full, oily and warming. On the palate, layers of yellow plum, brioche and a striking saline minerality that recalls oyster shells. The 14% alcohol provides a beautiful structure in which the fresh acidity remains beautifully balanced with the creamy texture of the oak ageing.

Finish A long, elegant finish. The fresh notes of citrus and salinity slowly fade away and make way for a warm memory of toasted almonds and mild spices.

Serving tips & pairings

• Serving: The ideal way to allow the complex aromas to show fully at their best is not to serve the wine too cold (10-12°C), in a generous glass.

• Potential: Although already beautiful now, this Semillon has enormous ageing potential of 10 to 12 years, during which it will develop more honeyed and nutty notes.

• Gastronomy: Excellent with refined fish dishes such as poached turbot, scallops or a mild Thai green curry. Also fantastic alongside a salad with smoked chicken and chevin goat's cheese.

• Moment: This is the ideal wine for a special dinner or a tasting among connoisseurs, where the unique origin and the story of the Catalina flying boats can take centre stage fully.
